Pineapple Cookies

Pineapple cookies are a delightful treat that blends the tangy sweetness of pineapple with buttery cookie goodness. To make them, start by creaming together softened butter and granulated sugar until light and fluffy.

Here’s a simple and delicious recipe for pineapple cookies:

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed pineapple, drained well (canned pineapple works fine; make sure to drain excess liquid)
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: Powdered sugar for dusting (if desired)

Instructions:

  1. Preheat oven and prepare baking sheets:
    • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. Cream butter and sugar:
    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add egg, vanilla, and pineapple:
    • Beat in the egg and vanilla extract until well combined. Add the crushed pineapple and mix until evenly distributed.
  4. Combine dry ingredients:
    • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Mix wet and dry ingredients:
    • Gradually add the dry ingredients to the wet mixture, mixing until a dough forms. The dough should be soft but manageable. If it’s too sticky, you can refrigerate it for 15-30 minutes to firm up.
  6. Form cookies:
    • Using a spoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheets, leaving some space between each cookie for spreading.
  7. Bake:
    • Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The cookies may still appear slightly soft in the center, but they will firm up as they cool.
  8. Cool and dust (optional):
    • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. If desired, dust the cooled cookies with powdered sugar before serving.
  9. Enjoy:
    • Once cooled and dusted (if using powdered sugar), your pineapple cookies are ready to enjoy! They should have a delightful pineapple flavor and a soft texture.
