Buckwheat & Nuts Bar Recipe

Ingredients:

  • 1 cup raw buckwheat groats
  • 1 cup mixed nuts (such as almonds, walnuts, cashews, or pecans)
  • 1/2 cup dried fruit (like cranberries, raisins, or apricots), chopped if large
  • 1/4 cup honey or maple syrup
  • 1/4 cup nut butter (like almond or cashew butter)
  • 1/2 teaspoon vanilla extract (optional)
  • A pinch of salt

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Toast Buckwheat: Spread the buckwheat groats on a baking sheet and toast in the preheated oven for about 8-10 minutes, or until they are slightly golden and fragrant. Stir halfway through to ensure even toasting. Let them cool.
  3. Prepare Nuts: Roughly chop the nuts and place them in a large mixing bowl.
  4. Mix Ingredients: Add the toasted buckwheat and dried fruit to the bowl with nuts. Mix well.
  5. Heat Liquid Ingredients: In a small saucepan, combine the honey (or maple syrup) and nut butter. Heat over low heat, stirring constantly, until the mixture is smooth and well combined. Stir in the vanilla extract and salt if using.
  6. Combine: Pour the warm honey-nut butter mixture over the dry ingredients in the bowl. Stir well until everything is evenly coated.
  7. Press Into Pan: Line an 8×8-inch (20×20 cm) baking pan with parchment paper. Transfer the mixture into the pan and press it down firmly with the back of a spoon or your hands.
  8. Cool and Set: Allow the bars to cool completely at room temperature. For faster setting, you can place them in the refrigerator for about 1-2 hours.
  9. Cut and Enjoy: Once set, lift the bars out of the pan using the parchment paper and cut into squares or rectangles.
