Here’s how you can prepare this unique and delicious dessert:

Ingredients

For the Lauki Halwa:

  • 2 cups grated lauki (bottle gourd)
  • 1 tablespoon ghee (clarified butter)
  • 1/2 cup milk
  • 1/4 cup sugar (adjust to taste)
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons khoya (optional, for richness)
  • Chopped nuts (almonds, cashews, pistachios) for garnish

For the Tart Crust:

  • 1 cup all-purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon salt
  • 2-3 tablespoons cold water (as needed)

Instructions

Step 1: Prepare the Tart Crust

  1. Make the Dough: In a mixing bowl, combine the all-purpose flour, powdered sugar, and salt. Add the cold, cubed butter. Using your fingers or a pastry cutter, blend the butter into the flour until the mixture resembles coarse crumbs.
  2. Form the Dough: Gradually add cold water, 1 tablespoon at a time, and mix until the dough just comes together. Do not overmix.
  3. Chill the Dough: Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. Bake the Tart Shell: Preheat the oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface and press it into a tart pan. Trim the edges and prick the base with a fork. Bake for 15-20 minutes, or until golden brown. Let it cool completely.

Step 2: Prepare the Lauki Halwa

  1. Cook the Lauki: Heat ghee in a pan, add the grated lauki, and sauté for 5-7 minutes until it softens and the raw smell disappears.
  2. Add Milk: Pour in the milk and cook the mixture on medium heat, stirring occasionally, until the milk is absorbed and the lauki is cooked through.
  3. Sweeten and Flavor: Add the sugar and khoya (if using) to the lauki mixture. Continue to cook, stirring frequently, until the mixture thickens and leaves the sides of the pan. Add cardamom powder and mix well.
  4. Garnish: Add chopped nuts and mix. Remove from heat and let the halwa cool slightly.

Step 3: Assemble the Lauki Tart Halwa

  1. Fill the Tart: Spoon the cooled lauki halwa into the baked tart shell, spreading it evenly.
  2. Garnish and Serve: Garnish the top with more chopped nuts, and you can also add a drizzle of saffron-infused milk or a sprinkle of edible silver leaf for a festive touch.
