Here’s a simple recipe to make delicious Paneer 65 at home:

Ingredients

  • For Marination:
    • 250 grams paneer, cut into cubes
    • 2 tablespoons yogurt
    • 1 tablespoon ginger-garlic paste
    • 1 tablespoon red chili powder (adjust to taste)
    • ½ teaspoon turmeric powder
    • 1 teaspoon garam masala
    • 1 tablespoon lemon juice
    • Salt to taste
    • 1-2 green chilies, finely chopped (optional)
  • For Coating:
    • 3-4 tablespoons cornstarch or all-purpose flour (maida)
    • 1 tablespoon rice flour (for extra crispiness)
    • Water as needed
    • Oil for deep frying
  • For Garnish:
    • Fresh coriander leaves, chopped
    • Lemon wedges
    • Sliced onions and green chilies (optional)

Instructions

  1. Marinate the Paneer:
    • In a bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, salt, and green chilies (if using).
    • Add the paneer cubes to the marinade and mix well to coat them evenly. Let it marinate for at least 30 minutes (or up to 2 hours for more flavor).
  2. Prepare the Coating:
    • In a separate bowl, mix cornstarch, rice flour, and a pinch of salt. Add water gradually to make a smooth, thick batter (it should be thick enough to coat the paneer).
  3. Coat the Paneer:
    • Heat oil in a deep frying pan over medium heat.
    • Dip the marinated paneer cubes into the batter, ensuring they are well coated.
  4. Fry the Paneer:
    • Once the oil is hot, carefully add the coated paneer cubes in batches, making sure not to overcrowd the pan.
    • Fry until they turn golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels to remove excess oil.
  5. Serve:
    • Garnish with fresh coriander leaves, lemon wedges, and optional sliced onions and green chilies.
    • Serve hot as an appetizer or snack with mint chutney or ketchup.
