Creamy Mushroom Pasta Recipe

Here’s a quick and easy creamy mushroom pasta recipe: sauté mushrooms with garlic and onions, stir in cream and broth, toss with cooked pasta, and garnish with Parmesan and parsley.

Here simple recipe to prepare creamy mushroom pasta:

Ingredients:

  • 300g pasta (fettuccine, linguine, or your choice)
  • 250g mushrooms (button, cremini, or a mix), sliced
  • 2 tablespoons olive oil or butter
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 200ml heavy cream (or substitute with coconut cream for a vegan option)
  • 50g grated Parmesan cheese (optional for extra creaminess)
  • 1/2 cup vegetable or chicken broth (or pasta water)
  • 1 teaspoon dried thyme (or fresh)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Extra Parmesan or vegan cheese (optional)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and reserve about 1/2 cup of pasta water. Set the pasta aside.
  2. Sauté the Mushrooms:
    • While the pasta is cooking, heat olive oil or butter in a large skillet over medium heat. Add the mushrooms and cook until they release their moisture and become golden brown, about 6-8 minutes.
    • Remove the mushrooms from the skillet and set aside.
  3. Prepare the Sauce:
    • In the same skillet, add the chopped onions and sauté for 3-4 minutes until soft.
    • Add the minced garlic and cook for another minute until fragrant.
    • Pour in the broth and deglaze the pan, scraping up any browned bits. Let it simmer for 2 minutes to reduce slightly.
  4. Add Cream:
    • Lower the heat and pour in the heavy cream. Stir continuously and let it cook for 3-4 minutes until the sauce thickens slightly.
    • Add the thyme, salt, and pepper.
  5. Combine and Serve:
    • Return the mushrooms to the skillet and mix them with the creamy sauce.
    • Add the cooked pasta to the sauce, tossing to coat well. If the sauce is too thick, add some of the reserved pasta water, a little at a time, until the sauce reaches your desired consistency.
    • Stir in the grated Parmesan (if using) for extra richness.
  6. Garnish and Serve:
    • Garnish with freshly chopped parsley and extra Parmesan or vegan cheese if desired.

Tips:

  • For added protein, you can include grilled chicken or shrimp.
  • If you prefer a less creamy sauce, reduce the amount of cream and replace it with more broth or pasta water.
