Ingredients

  • 1 cup warm water (around 110°F/43°C)
  • 1 tbsp honey or maple syrup
  • 2¼ tsp active dry yeast (1 packet)
  • 1 cup whole wheat flour
  • 1 cup bread flour (or all-purpose flour)
  • ¼ cup rolled oats
  • ¼ cup flaxseeds (optional)
  • ¼ cup sunflower seeds
  • ¼ cup millet or quinoa
  • 1 tsp salt
  • 1 tbsp olive oil or vegetable oil

Instructions

  1. Prepare the yeast: In a small bowl, mix the warm water and honey. Sprinkle the yeast on top, stir gently, and let it sit for about 5–10 minutes until it becomes foamy. This activates the yeast.
  2. Combine dry ingredients: In a large mixing bowl, combine the whole wheat flour, bread flour, oats, flaxseeds, sunflower seeds, millet (or quinoa), and salt. Mix thoroughly to distribute the grains and seeds evenly.
  3. Mix the dough: Add the yeast mixture and olive oil to the dry ingredients. Stir until it forms a rough dough.
  4. Knead the dough: Transfer the dough to a floured surface and knead for about 8–10 minutes until it becomes smooth and elastic. You can also use a stand mixer with a dough hook for 5–7 minutes. If the dough is too sticky, add a little extra bread flour (1 tablespoon at a time).
  5. First rise: Place the dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1–1.5 hours or until it has doubled in size.
  6. Shape the dough: Once risen, punch down the dough to release the air. Shape it into a loaf and place it in a greased 9×5-inch loaf pan.
  7. Second rise: Cover the pan with a cloth and let the dough rise again for about 30–45 minutes, or until it has risen slightly above the edge of the pan.
  8. Bake: Preheat your oven to 375°F (190°C). Bake the bread for 30–35 minutes, or until the top is golden brown and it sounds hollow when tapped on the bottom.
  9. Cool: Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
