Tomato Pasta is a very wholesome pasta recipe made from organic tomato sauce and spices. It’s a subtle recipe with exciting flavours of tomato and a handful of other ingredients.

Here’s a simple and delicious recipe for Tomato Penne Pasta that’s perfect for a quick, satisfying meal:

Ingredients

For the Pasta:

  • 200g Penne pasta
  • Water (to boil)
  • Salt (1 tsp for boiling)

For the Tomato Sauce:

  • 3 medium ripe tomatoes (pureed or finely chopped)
  • 2 tbsp olive oil
  • 1 medium onion (finely chopped)
  • 3-4 garlic cloves (minced)
  • 1/2 tsp chili flakes
  • 1/2 tsp dried oregano or Italian seasoning
  • Fresh basil leaves (optional, for garnish)
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

Step 1: Cook the Pasta

  1. In a large pot, bring water to a boil. Add salt and the penne pasta.
  2. Cook according to the package instructions (usually 8-10 minutes) until al dente.
  3. Drain the pasta and reserve about 1/2 cup of the pasta water for the sauce.

Step 2: Make the Tomato Sauce

  1. Heat olive oil in a pan over medium heat. Add the minced garlic and sauté until fragrant.
  2. Add the chopped onion and cook until translucent.
  3. Stir in the tomato puree or chopped tomatoes. Cook for 5-7 minutes until the sauce thickens slightly.
  4. Add chili flakes, oregano, salt, and black pepper. Mix well.

Step 3: Combine Pasta and Sauce

  1. Add the cooked pasta to the tomato sauce. Toss well to coat evenly.
  2. If the sauce is too thick, add a few tablespoons of the reserved pasta water to adjust the consistency.

Step 4: Serve

  1. Garnish with freshly chopped basil leaves and grated Parmesan cheese, if desired.
  2. Serve hot with garlic bread or a fresh salad on the side.
