Sweet Potato Boats

Sweet Potato Boats

Sweet Potato Boats are a delicious and versatile dish where sweet potato halves are roasted and then loaded with various toppings, depending on your taste preferences.

Here’s a basic guide to make them:

Ingredients:

  • 2 large sweet potatoes
  • 1–2 tbsp olive oil
  • Salt and pepper (optional)
  • Topping Ideas:
    • Savory:
      • Black beans, corn, and avocado
      • Shredded chicken or turkey with BBQ sauce
      • Sautéed spinach, mushrooms, and feta
      • Guacamole and salsa
    • Sweet:
      • Almond butter, granola, and banana slices
      • Greek yogurt, honey, and berries
      • Cinnamon, nuts, and a drizzle of maple syrup

Instructions:

  1. Prepare the Sweet Potatoes:
    • Preheat your oven to 400°F (200°C).
    • Wash and scrub the sweet potatoes. Slice them in half lengthwise.
    • Brush the cut sides with olive oil and place them cut-side down on a baking sheet lined with parchment paper.
  2. Roast:
    • Bake for 25–30 minutes or until the sweet potatoes are tender when pierced with a fork.
  3. Scoop and Shape:
    • Allow the potatoes to cool slightly. Using a spoon, gently scoop out a small portion of the flesh from the center to create a “boat.”
  4. Add Toppings:
    • Fill the sweet potato boats with your desired toppings. For savory, add beans, veggies, or protein. For sweet, layer with fruits, nuts, or spreads.
  5. Serve:
    • Return to the oven for 5–10 minutes if you’d like the toppings warmed through, or serve immediately.

Tips:

  • For a heart-healthy option, keep toppings low in sodium and focus on fresh herbs, spices, and healthy fats like avocado.
  • For diabetics, stick with low-sugar toppings like cinnamon, nuts, or Greek yogurt.
