Ingredients

For the rice:

  • 2 cups basmati rice
  • 4 cups water
  • 1 bay leaf
  • 3–4 green cardamoms
  • 4 cloves
  • 1-inch cinnamon stick
  • 1 teaspoon salt

For the jackfruit marinade:

  • 2 cups raw jackfruit pieces (cleaned and cubed)
  • ½ cup thick yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • ½ teaspoon cumin powder
  • Salt to taste
  • 1 tablespoon lemon juice

For the biryani masala:

  • 2 tablespoons ghee or oil
  • 2 medium onions, thinly sliced
  • 2 medium tomatoes, chopped
  • 2–3 green chilies, slit
  • 1 teaspoon biryani masala powder
  • ½ teaspoon coriander powder
  • ½ teaspoon fennel seeds
  • A handful of fresh mint leaves
  • A handful of fresh coriander leaves
  • ½ cup warm milk with a pinch of saffron strands

Preparation

Step 1: Preparing the jackfruit

Clean and chop the raw jackfruit into bite-sized pieces. Apply a little oil to your knife and hands to prevent the sticky sap from clinging. Parboil the jackfruit in salted water for 5–7 minutes until slightly tender. Drain and set aside.

In a mixing bowl, combine yogurt, ginger-garlic paste, turmeric, red chili powder, cumin powder, garam masala, lemon juice, and salt. Add the jackfruit pieces and coat them thoroughly. Allow the mixture to marinate for at least 30 minutes to let the flavors penetrate.

Step 2: Cooking the rice

Rinse the basmati rice under cold water until the water runs clear. Soak it for 20 minutes, then drain. In a large pot, bring 4 cups of water to a boil. Add bay leaf, cardamoms, cloves, cinnamon stick, and salt. Add the soaked rice and cook until 70% done (the grains should still have a bite). Drain the rice immediately and set aside.

Step 3: Making the biryani masala

Heat ghee or oil in a deep, heavy-bottomed pan. Add fennel seeds and let them sizzle. Add the sliced onions and sauté on medium heat until golden brown and caramelized. Remove half of the onions for garnishing.

Add chopped tomatoes and slit green chilies to the remaining onions in the pan. Cook until the tomatoes soften and the oil begins to separate. Add biryani masala powder and coriander powder, mixing well.

Now add the marinated jackfruit to the masala. Cook for 5–7 minutes until the jackfruit absorbs the flavors and turns slightly golden. Add half of the mint and coriander leaves, stirring gently.

Step 4: Layering the biryani

In the same pot, spread the cooked jackfruit masala evenly as the bottom layer. Add a layer of partially cooked rice over it. Drizzle saffron-infused milk over the rice, along with the reserved caramelized onions, remaining mint, and coriander leaves.

Cover the pot with a tight-fitting lid. To seal the flavors, you can place a damp cloth between the pot and the lid or use dough to cover the edges. Cook on very low heat (dum) for 15–20 minutes, allowing the flavors to meld together.

Step 5: Serving

Once done, gently fluff the biryani with a fork, ensuring the layers remain intact. Serve hot with raita, papad, and a side of salad.

  • Use raw jackfruit, not ripe, for its meaty texture.
  • Marinating the jackfruit for longer enhances its flavor.
  • For a richer aroma, add a few drops of rose water or kewra essence before sealing the biryani.
