Let us prepare this simple and delicious recipe step by step.

🛒 Ingredients Required

For Roasting Makhana:

  • 2 cups makhana (fox nuts)
  • 1 tablespoon ghee or oil
  • ¼ teaspoon turmeric powder (optional)
  • ½ teaspoon black pepper powder
  • Salt to taste

For Chaat Assembly:

  • ¼ cup finely chopped onion
  • ¼ cup finely chopped tomato (remove seeds)
  • 2 tablespoons boiled potato (small cubes)
  • 2 tablespoons boiled chickpeas (optional)
  • 1 green chili (finely chopped)
  • 1 tablespoon coriander leaves (chopped)
  • 2 tablespoons mint chutney
  • 2 tablespoons tamarind chutney
  • ½ teaspoon chaat masala
  • ½ teaspoon roasted cumin powder
  • 1 teaspoon lemon juice
  • Pomegranate seeds for garnish (optional)

👩‍🍳 Preparation Method

Step 1: Roast the Makhana

Heat a pan on medium flame and add ghee or oil. Add the makhana and roast them for 6–8 minutes while stirring continuously. They should become crisp and slightly golden.

To check if they are properly roasted, press one makhana between your fingers — it should break easily and feel crunchy.

Add salt, turmeric, and black pepper. Mix well and switch off the flame. Let them cool for 2–3 minutes.

Step 2: Prepare the Vegetable Mix

In a mixing bowl, add chopped onions, tomatoes, boiled potatoes, boiled chickpeas (if using), green chili, and coriander leaves. Mix gently.

Step 3: Assemble the Chaat

Add the roasted makhana to the vegetable mixture. Pour mint chutney and tamarind chutney over it.

Sprinkle chaat masala and roasted cumin powder. Add lemon juice for a fresh tangy flavor.

Gently toss everything together so the chutneys coat the makhana evenly. Be careful not to mix too hard, as makhana can break.

Step 4: Garnish & Serve

Garnish with pomegranate seeds and extra coriander leaves.

Serve immediately to maintain the crunchiness.
