  • 1 onion (thinly sliced)
  • 1 carrot (julienned)
  • 1 capsicum (thinly sliced)
  • 1/2 cup cabbage (shredded)
  • 2 green chilies (slit)
  • 2 tablespoons spring onion
  • 1 tablespoon soy sauce
  • 1 tablespoon red chili sauce
  • 1 tablespoon tomato ketchup
  • 1 teaspoon vinegar
  • 1/2 teaspoon black pepper powder
  • 1/2 teaspoon chili flakes
  • Salt as needed
  • 1 teaspoon schezwan sauce (optional for extra spice)

Preparation Method

Step 1: Boil the noodles

Take a large vessel and add enough water. Bring it to a boil. Add a little salt and a few drops of oil. Once the water starts boiling, add the noodles.

Cook them according to the packet instructions until they are soft but still slightly firm. Do not overcook them because soft noodles can become sticky.

Once cooked, drain the water immediately and rinse the noodles with cold water. This helps stop the cooking process and keeps the noodles separate.

Add a few drops of oil and toss gently so they don’t stick together. Keep them aside.

Step 2: Prepare the vegetables

Wash all the vegetables properly.

Cut the onion, carrot, capsicum, and cabbage into thin long strips. Thinly sliced vegetables cook faster and give the noodles that authentic restaurant look.

Chop garlic and ginger very finely because they add a wonderful aroma to the noodles.

Step 3: Stir-fry the vegetables

Take a wok or a wide pan. Heat 1 tablespoon oil on high flame.

Add chopped garlic, ginger, and green chilies. Sauté for a few seconds until the raw smell goes away.

Now add sliced onions and stir fry for 30 seconds.

Add carrot, capsicum, and cabbage. Stir fry on high flame for 2–3 minutes.

The vegetables should remain slightly crunchy. Avoid overcooking because crunchy vegetables make the noodles taste better.

Step 4: Add sauces and spice mix

Now add soy sauce, red chili sauce, tomato ketchup, vinegar, black pepper powder, chili flakes, and a little salt.

Mix everything quickly on high flame.

If you like very spicy noodles, add 1 teaspoon schezwan sauce. This gives a bold street-style spicy flavor.

Cook the sauce mixture for 30–40 seconds so that the vegetables absorb all the flavors.

Step 5: Add noodles

Now add the boiled noodles to the pan.

Using tongs or two forks, gently toss the noodles with the vegetables and sauces.

Mix everything evenly so every strand gets coated with the spicy sauce.

Keep the flame high while tossing. This gives a smoky flavor just like restaurant noodles.

Cook for another 2 minutes.

Finally, add spring onions and toss once again.
