Here’s a recipe for delicious Coconut Truffles:

Ingredients:

  • 1 cup shredded coconut (unsweetened)
  • 1/2 cup coconut cream (from a can of full-fat coconut milk)
  • 1/4 cup coconut oil, melted
  • 2-3 tablespoons maple syrup or honey (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 4 ounces of dark chocolate, melted (for coating)

Instructions:

  1. Prepare Coconut Mixture:
    • In a mixing bowl, combine the shredded coconut, coconut cream, melted coconut oil, maple syrup or honey, vanilla extract, and a pinch of salt.
    • Mix well until everything is thoroughly combined and the mixture holds together when pressed.
  2. Shape the Truffles:
    • Scoop out small portions of the coconut mixture and roll them into small balls between your palms. Place each ball on a parchment-lined baking sheet or plate.
    • If the mixture is too sticky to roll, you can chill it in the refrigerator for 15-30 minutes to firm up slightly.
  3. Optional Chocolate Coating:
    • If you’d like to coat the truffles in chocolate, melt the dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method), stirring until smooth.
    • Dip each coconut ball into the melted chocolate using a fork or dipping tool, ensuring it’s completely coated. Tap off any excess chocolate and place back on the parchment-lined sheet.
  4. Chill:
    • Place the coated or uncoated truffles in the refrigerator to set for at least 30 minutes, or until firm.
  5. Serve:
    • Once the truffles have hardened, they are ready to be enjoyed! Store any leftovers in an airtight container in the refrigerator for up to a week.

  • Variations: You can customize these truffles by adding a hint of almond extract, rolling them in cocoa powder or additional shredded coconut before chilling, or even adding finely chopped nuts for extra texture.
