  • 1/2 teaspoon garam masala
  • 1 teaspoon amchur (dry mango powder)
  • 1/2 teaspoon red chili powder
  • Salt to taste

For Frying:

  • Oil for deep frying

Preparation

Step 1: Prepare the Dough

  1. In a large mixing bowl, add all-purpose flour and salt.
  2. Add ghee or oil and rub it into the flour with your fingertips until the mixture resembles breadcrumbs.
  3. Gradually add water and knead into a soft, smooth dough.
  4. Cover the dough with a damp cloth and let it rest for 30 minutes.

Step 2: Prepare the Dal Filling

  1. Wash and soak moong dal in water for at least 2 hours. Drain completely.
  2. Coarsely grind the soaked dal in a blender without adding water.
  3. Heat 2 tablespoons of oil in a pan. Add cumin seeds, fennel seeds, and a pinch of hing.
  4. Once they splutter, add the ground dal.

  6. Add coriander powder, red chili powder, garam masala, amchur, and salt.

  1. Divide the dough into equal portions and roll them into balls.
  2. Flatten one ball and roll it out into a small disc.
  3. Place a spoonful of the cooled dal filling in the center.
  4. Carefully bring the edges together and seal tightly to enclose the filling.
  5. Gently flatten the stuffed ball with your palm. Do not press too hard.
  6. Repeat for all the remaining dough and filling.

Step 4: Fry the Kachoris

  1. Heat oil in a deep frying pan over medium-low heat.
  2. To test if the oil is ready, drop a small piece of dough into the oil. It should rise slowly to the surface, not immediately.
  3. Gently slide in a few kachoris at a time. Do not overcrowd the pan.
  4. Fry on low to medium heat until golden brown and crisp on both sides. Be patient – frying on low heat ensures even cooking and flakiness.
  5. Remove and drain on paper towels.
