Here’s a simple recipe for Egg Hakka Noodles, a popular Indo-Chinese dish:

Ingredients:

  • 200g Hakka Noodles (or any noodles of your choice)
  • 2 eggs
  • 1 cup mixed vegetables (carrots, bell peppers, cabbage, onions, etc., thinly sliced)
  • 2-3 garlic cloves, minced
  • 2 green chilies, finely chopped (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon chili sauce (adjust to taste)
  • 1 tablespoon vinegar
  • 1 tablespoon sesame oil (or any cooking oil)
  • Salt to taste
  • Freshly ground black pepper to taste
  • Spring onions, chopped (for garnish)

Instructions:

  1. Cook the Noodles:
    • Bring a large pot of water to a boil. Add a pinch of salt and a few drops of oil to prevent the noodles from sticking.
    • Add the hakka noodles to the boiling water and cook according to the package instructions until they are al dente (cooked but still firm). This usually takes about 8-10 minutes.
    • Once cooked, drain the noodles and rinse them under cold water to stop the cooking process. Set aside.
  2. Prepare the Egg Mixture:
    • Beat the eggs in a bowl and season with a pinch of salt and pepper.
    • Heat a tablespoon of oil in a large skillet or wok over medium heat.
    • Pour the beaten eggs into the skillet and scramble them until cooked through. Remove from the skillet and set aside.
  3. Cook the Vegetables:
    • In the same skillet or wok, heat another tablespoon of oil over medium-high heat.
    • Add the minced garlic and chopped green chilies (if using), and sauté for about 30 seconds until fragrant.
    • Add the sliced vegetables and stir-fry for 2-3 minutes until they are tender yet crisp.
  4. Combine Everything:
    • Add the cooked noodles to the skillet with the vegetables.
    • Pour the soy sauce, chili sauce, and vinegar over the noodles and vegetables.
    • Add the scrambled eggs back to the skillet.
    • Toss everything together gently using tongs or a spatula until the noodles are evenly coated with the sauce and the ingredients are well combined.
    • Taste and adjust seasoning with salt, pepper, or additional sauces if needed.
  5. Serve:
    • Transfer the Egg Hakka Noodles to serving plates or bowls.
    • Garnish with chopped spring onions.
    • Serve hot and enjoy your delicious homemade Egg Hakka Noodles!
