Prepare the Dough:
In a large mixing bowl, add the whole wheat flour and a pinch of salt (if using).Heat 1/2 cup of ghee until it melts. Pour this hot ghee over the flour and mix it well using a spoon initially (as it will be hot), then use your hands to combine until the mixture resembles breadcrumbs.Add water little by little and knead into a stiff dough, similar to what you would for making puris.Cover the dough and let it rest for about 15-20 minutes.Make the Choorma:Divide the dough into equal portions and roll them into thick discs (about 4-5 inches in diameter).Heat a tawa or griddle and cook these discs on medium heat until they are golden brown on both sides. You can apply a little ghee while cooking for extra flavor.Once cooked, allow them to cool completely.Break the discs into small pieces and grind them into a coarse powder using a food processor or blender.Prepare the Jaggery Mixture:In a pan, add the grated jaggery and a little water. Heat on low flame until the jaggery melts completely, forming a syrup.Add cardamom powder, sesame seeds, desiccated coconut, and chopped nuts to the syrup.
