Making chicken cutlets is a delicious and versatile dish that can be enjoyed on its own, in sandwiches, or alongside your favorite sides. Here’s a simple recipe to make chicken cutlets:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (you can use plain or seasoned breadcrumbs)
  • 1/2 cup grated Parmesan cheese (optional)
  • 2-3 tablespoons olive oil or vegetable oil, for frying

Instructions:

  1. Preheat your oven to 200°C (400°F) to keep the chicken cutlets warm while you cook the remaining batches.
  2. Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken breasts to an even thickness of about 1/4 to 1/2 inch. This helps tenderize the meat and ensures even cooking.
  3. Season both sides of the chicken breasts with salt and pepper.
  4. Set up a breading station with three shallow bowls or plates. Place the flour in one bowl, beat the eggs in another bowl, and mix the breadcrumbs with grated Parmesan cheese (if using) in the third bowl.
  5. Dredge each chicken breast in the flour, shaking off any excess.
  6. Dip the floured chicken breasts into the beaten eggs, allowing any excess to drip off.
  7. Coat the chicken breasts evenly with the breadcrumb mixture, pressing gently to adhere the breadcrumbs to the chicken.
  8. Heat olive oil or vegetable oil in a large skillet over medium heat. Once the oil is hot, add the breaded chicken breasts to the skillet, working in batches if necessary to avoid overcrowding the pan.
  9. Cook the chicken cutlets for about 3-4 minutes on each side, or until they are golden brown and cooked through. The internal temperature of the chicken should reach 75°C (165°F).
  10. Once cooked, transfer the chicken cutlets to a baking sheet lined with parchment paper and place them in the preheated oven to keep warm while you cook the remaining batches.
  11. Serve the chicken cutlets hot with your favorite sides, such as mashed potatoes, steamed vegetables, or a crisp salad. Enjoy!
