Hyderabadi Chicken Biryani is one of the most iconic and flavorful Indian rice dishes, loved for its rich aroma, spicy masala, tender chicken, and perfectly cooked basmati rice. Originating from Hyderabad, this biryani is famous for its dum cooking style, where marinated chicken and half-cooked rice are layered together and slow-cooked to perfection.
Every grain of rice stays separate, fragrant, and full of masala flavor, while the chicken turns juicy and tender. This dish is perfect for festivals, family lunches, special dinners, or weekend cooking when you want something truly special.
Let’s make authentic-style Hyderabadi Chicken Biryani step by step.
Ingredients
For Chicken Marination
- 500 grams chicken
- 1 cup thick curd
- 1 tablespoon ginger-garlic paste
- 2 green chilies (slit)
- 1 teaspoon red chili powder
- ½ teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- ½ teaspoon cumin powder
- Salt to taste
- 1 tablespoon lemon juice
- 2 tablespoons fried onions
- 2 tablespoons chopped coriander leaves
- 2 tablespoons mint leaves
- 2 tablespoons oil
For Rice
- 2 cups basmati rice
- Water as needed
- 2 bay leaves
- 4 cloves
- 2 cardamoms
- 1 cinnamon stick
- 1 teaspoon salt
- 1 teaspoon oil
For Layering
- Fried onions
- Mint leaves
- Coriander leaves
- Saffron soaked in warm milk
- 2 tablespoons ghee
- 1 tablespoon rose water (optional)
Step 1: Marinate the Chicken
Take a large bowl and add chicken, curd, ginger-garlic paste, green chilies, red chili powder, turmeric, garam masala, coriander powder, cumin powder, salt, lemon juice, fried onions, coriander, mint, and oil.
Mix everything really well so the chicken is fully coated in the masala.
Let it marinate for at least 1 hour. For best results, keep it for 4 hours or overnight in the refrigerator.
Step 2: Cook the Rice
Wash basmati rice 2–3 times and soak it for 30 minutes.
Boil plenty of water in a large vessel. Add bay leaves, cloves, cardamom, cinnamon, salt, and oil.
Add soaked rice and cook until it is 70% done. The rice should still have a slight bite because it will finish cooking on dum.
Drain the water and keep the rice aside.
Step 3: Layer the Biryani
Take a thick-bottomed handi or deep pan.
First spread the marinated chicken evenly at the bottom.
Now add a layer of half-cooked rice over the chicken.
Top it with fried onions, mint leaves, coriander leaves, saffron milk, ghee, and a few drops of rose water.
Repeat the layering if needed.
The final top layer should always be rice with fried onions and saffron for the classic biryani look.
Step 4: Dum Cooking
Cover the handi tightly with a lid. You can seal the edges with wheat dough for authentic dum cooking.
Cook on high flame for 5 minutes, then reduce to low flame for 25–30 minutes.
For extra safety, place a tawa under the handi while cooking on low flame. This prevents the bottom from burning.
During dum, the chicken cooks in its own juices while the rice absorbs all the masala flavors.
Step 5: Final Serving
After cooking, let the biryani rest for 10 minutes before opening the lid.
Open it gently and enjoy the rich aroma of spices, saffron, mint, and chicken.
Mix the biryani lightly from the sides so the rice grains do not break.
Serve hot with:
- Onion raita
- Salan
- Boiled egg
- Lemon wedges
- Onion slices
