Ingredients of Kesar Srikhand Recipe:
- 2 cups plain yogurt (curd)
- 1/2 cup powdered sugar (adjust to taste)
- 1/4 teaspoon saffron threads
- 2 tablespoons warm milk
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (optional, for garnish)
- Saffron strands for garnish (optional)
Preparation of recipee:
Hang the Yogurt: Place a muslin cloth or a fine mesh strainer over a bowl. Pour the yogurt onto the cloth and tie it up. Hang the cloth over the bowl and let the excess water drip out. This process might take a few hours or overnight. Alternatively, you can use Greek yogurt to skip this step.
Prepare Saffron Milk: Crush the saffron threads slightly and soak them in warm milk. Allow them to steep for about 10-15 minutes. This will infuse the milk with the flavor and color of saffron.
Mix Ingredients: Once the yogurt is thick and most of the water is drained, transfer it to a mixing bowl. Add the powdered sugar, saffron-infused milk, and cardamom powder. Mix well until all the ingredients are thoroughly combined.
Chill: Cover the bowl and let the Srikhand chill in the refrigerator for at least 2-3 hours. Chilling allows the flavors to meld together and enhances the taste.
Garnish and Serve: Before serving, garnish the Kesar Srikhand with chopped nuts and a few strands of saffron if desired.
Enjoy: Kesar Srikhand can be served as a dessert or as a part of a traditional Indian meal. It pairs well with puris or can be enjoyed on its own.
