Mutton curry, a quintessential dish in many cultures across the world, embodies the rich and aromatic flavors of tender mutton simmered in a tantalizing blend of spices. Preparation Of Mutton curry:
Ingredients:
- 500g mutton, cut into pieces
- 2 onions, finely chopped
- 2 tomatoes, chopped
- 2 tablespoons ginger-garlic paste
- 2 green chilies, slit
- 1 teaspoon turmeric powder
- 1 tablespoon red chili powder
- 1 tablespoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- Salt to taste
- 3 tablespoons oil
- Fresh coriander leaves for garnishing
- Water as needed
Instructions:
- Heat oil in a heavy-bottomed pot. Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a couple of minutes until the raw smell disappears.
- Add chopped tomatoes and green chilies. Cook until the tomatoes are soft and oil starts to separate from the masala.
- Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for another couple of minutes.
- Add the mutton pieces and coat them well with the masala. Cook for about 5-10 minutes on medium heat, stirring occasionally.
- Add enough water to cover the mutton pieces. Cover the pot and let it simmer on low heat until the mutton is tender, stirring occasionally. This might take about 45 minutes to 1 hour depending on the tenderness of the meat.
- Once the mutton is cooked, add garam masala and adjust salt according to taste. Simmer for a few more minutes.
- Garnish with fresh coriander leaves.
