Ingredients:

  • 1 cup rolled oats
  • 1/2 cup nut butter (such as almond, peanut, or cashew butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup mini chocolate chips (optional)
  • 1/4 cup chopped nuts or seeds (such as almonds, walnuts, chia seeds, or flaxseeds)
  • 1/4 cup dried fruit (such as raisins, cranberries, or chopped dates) (optional)
  • 1/2 tsp vanilla extract (optional)

Instructions:

  1. Mix Ingredients: In a large bowl, combine the rolled oats, nut butter, honey (or maple syrup), and vanilla extract (if using). Stir until well mixed.
  2. Add Mix-ins: Fold in the mini chocolate chips, chopped nuts, and dried fruit if desired.
  3. Form Balls: Using your hands or a small cookie scoop, form the mixture into bite-sized balls, about 1 inch in diameter. Press firmly to ensure they stick together.
  4. Chill: Place the balls on a baking sheet or plate lined with parchment paper. Refrigerate for at least 30 minutes to firm up.
  5. Store: Keep the oatmeal balls in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
