Paneer 65 is a popular Indian appetizer made from paneer (Indian cottage cheese) marinated in spices and then deep-fried until crispy.
Here’s a simple recipe to make delicious Paneer 65 at home:
Ingredients
- For Marination:
- 250 grams paneer, cut into cubes
- 2 tablespoons yogurt
- 1 tablespoon ginger-garlic paste
- 1 tablespoon red chili powder (adjust to taste)
- ½ teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 tablespoon lemon juice
- Salt to taste
- 1-2 green chilies, finely chopped (optional)
- For Coating:
- 3-4 tablespoons cornstarch or all-purpose flour (maida)
- 1 tablespoon rice flour (for extra crispiness)
- Water as needed
- Oil for deep frying
- For Garnish:
- Fresh coriander leaves, chopped
- Lemon wedges
- Sliced onions and green chilies (optional)
Instructions
- Marinate the Paneer:
- In a bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, salt, and green chilies (if using).
- Add the paneer cubes to the marinade and mix well to coat them evenly. Let it marinate for at least 30 minutes (or up to 2 hours for more flavor).
- Prepare the Coating:
- In a separate bowl, mix cornstarch, rice flour, and a pinch of salt. Add water gradually to make a smooth, thick batter (it should be thick enough to coat the paneer).
- Coat the Paneer:
- Heat oil in a deep frying pan over medium heat.
- Dip the marinated paneer cubes into the batter, ensuring they are well coated.
- Fry the Paneer:
- Once the oil is hot, carefully add the coated paneer cubes in batches, making sure not to overcrowd the pan.
- Fry until they turn golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels to remove excess oil.
- Serve:
- Garnish with fresh coriander leaves, lemon wedges, and optional sliced onions and green chilies.
- Serve hot as an appetizer or snack with mint chutney or ketchup.
