Here’s a simple recipe to prepare paneer and capsicum wrap:
Ingredients
For the Filling:
- 200 grams paneer (cottage cheese), cut into small cubes
- 1 medium capsicum (bell pepper), thinly sliced (use a mix of colors for extra appeal if you like)
- 1 medium onion, thinly sliced
- 1 small tomato, chopped
- 2 tbsp oil (for cooking)
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- ½ tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- 1 tsp garam masala
- 1 tsp coriander powder
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
For the Wraps:
- 4 whole wheat tortillas (or rotis/chapatis)
- 2 tbsp mayonnaise or yogurt (optional, for a creamy base)
- 1 tsp green chutney (optional, for extra flavor)
Instructions
Preparing the Paneer and Capsicum Filling:
- Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add sliced onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and sauté for another minute until the raw aroma disappears.
- Add the turmeric powder, red chili powder, garam masala, and coriander powder. Stir well to combine and cook the spices for a minute.
- Add the capsicum and tomatoes, and cook for 3–4 minutes until the capsicum is slightly tender but still has a slight crunch.
- Add the paneer cubes and salt. Toss gently to coat the paneer and cook for 2–3 minutes until the paneer absorbs the flavors.
- Garnish with chopped coriander leaves and remove from heat. Set aside.
Assembling the Wraps:
- Heat the tortillas or rotis on a tawa (griddle) until warm and pliable.
- Spread a thin layer of mayonnaise or yogurt on each tortilla (optional) and a little green chutney if you like.
- Place a generous amount of the paneer and capsicum filling in the center of the tortilla.
- Fold the sides of the tortilla over the filling, then roll it up to form a wrap.
Serving:
Serve the wraps warm, optionally cut in half for easier handling. They pair well with extra green chutney or a simple salad on the side.
