Ingredients:

  • 500g pork (diced)
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 cup peas (fresh or frozen)
  • 2 garlic cloves, minced
  • 2 tablespoons flour
  • 1 cup chicken or vegetable broth
  • 1/2 cup milk or cream
  • 1 teaspoon thyme (dried or fresh)
  • 1 teaspoon rosemary (dried or fresh)
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter

For the Crust:

  • 1 sheet of puff pastry (store-bought or homemade)
  • 1 egg (beaten, for egg wash)

Instructions:

  1. Prepare the Filling:
    • Heat olive oil or butter in a large pan over medium heat. Add diced pork and cook until browned. Remove the pork and set aside.
    • In the same pan, add chopped onions, carrots, and potatoes. Cook for 5-7 minutes until softened.
    • Add minced garlic and cook for another minute.
    • Stir in the flour and cook for 1-2 minutes to create a roux.
    • Gradually add the broth, stirring continuously until the mixture thickens.
    • Add milk or cream, thyme, rosemary, salt, and pepper. Stir well.
    • Return the pork to the pan and add the peas. Simmer for 10-15 minutes until the mixture thickens and the vegetables are tender.
    • Remove from heat and let the filling cool slightly.
  2. Assemble the Pie:
    • Preheat the oven to 400°F (200°C).
    • Transfer the filling to a baking dish or individual ramekins.
    • Roll out the puff pastry to fit over the top of the dish. Place the pastry over the filling, pressing the edges to seal.
    • Cut a few slits in the top of the pastry to allow steam to escape.
    • Brush the pastry with beaten egg for a golden finish.
  3. Bake:
    • Bake the pot pie in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crispy.
  4. Serve:
