Instructions:

  1. Prepare the potatoes:
    • Peel the potatoes and slice them into thin rounds, about 1/4 inch thick.
    • Place the potato slices in a bowl of cold water to rinse off excess starch. Pat them dry with paper towels.
  2. Cook the potato coins:
    • Heat a large skillet over medium heat and add enough oil to coat the bottom of the skillet.
    • Once the oil is hot, arrange the potato slices in a single layer in the skillet.
