Ingredients:

  • Bread slices (white, whole wheat, or multigrain)
  • Boiled potatoes (2-3, medium-sized)
  • Onion (1, finely chopped)
  • Green chilies (1-2, finely chopped, optional)
  • Ginger (1-inch piece, grated)
  • Coriander leaves (a handful, chopped)
  • Cumin seeds (1/2 tsp)
  • Turmeric powder (1/4 tsp)
  • Red chili powder (1/2 tsp, adjust to taste)
  • Garam masala (1/2 tsp)
  • Amchur (dry mango) powder (1/2 tsp, optional for tanginess)
  • Butter or ghee (for toasting the sandwich)
  • Salt (to taste)
  • Chutney (optional: green chutney or tomato ketchup for serving)

Instructions:

  1. Prepare the Aloo Masala:
    • Heat a little oil in a pan.
    • Add cumin seeds and let them crackle.
    • Add grated ginger, chopped green chilies, and onions. Sauté until the onions turn translucent.
    • Add turmeric powder, red chili powder, and salt. Stir well.
    • Add the boiled and mashed potatoes. Mix everything well.
    • Add garam masala, amchur powder, and chopped coriander leaves. Stir to combine.
    • Cook the mixture for a few minutes, then turn off the heat. Let it cool slightly.
  2. Assemble the Sandwich:
    • Take two slices of bread.
    • Spread the aloo masala evenly on one slice of bread.
    • If using chutney, spread it on the other slice of bread.
    • Place the second slice of bread on top of the first.
  3. Toast the Sandwich:
    • Heat a pan or sandwich maker.
    • Spread butter or ghee on the outer sides of the sandwich.
    • Toast the sandwich on both sides until golden brown and crispy.
  4. Serve:
    • Cut the sandwich in halves or quarters.
    • Serve hot with green chutney, tomato ketchup, or your favorite dip.
