Veg nuggets are crispy, bite-sized snacks made from a mix of seasoned vegetables, perfect for dipping and snacking.

Here’s a simple Veg Nuggets recipe to make them at home:

Ingredients:

  • Mixed vegetables: 2 cups (e.g., carrots, peas, corn, beans, potatoes – boiled and mashed)
  • Onion: 1 small, finely chopped
  • Green chilies: 1-2, finely chopped (optional)
  • Ginger: 1 tsp, grated
  • Garlic: 1 tsp, minced (optional)
  • Coriander leaves: A handful, chopped
  • Breadcrumbs: 1 cup (plus extra for coating)
  • All-purpose flour (maida): 2 tbsp
  • Cornflour: 2 tbsp
  • Red chili powder: 1/2 tsp (adjust to taste)
  • Garam masala: 1/2 tsp
  • Cumin powder: 1/2 tsp
  • Salt: To taste
  • Black pepper: 1/4 tsp
  • Oil: For frying

Instructions:

  1. Prepare the Veggie Mix:
    • Boil the mixed vegetables until tender. Drain and mash them.
    • In a pan, heat a little oil. Add chopped onions, ginger, garlic, and green chilies (if using). Sauté until the onions are translucent.
    • Add the mashed vegetables to the pan and mix well.
    • Add red chili powder, garam masala, cumin powder, salt, and black pepper. Stir to combine.
    • Cook the mixture for a few minutes, then turn off the heat. Let it cool slightly.
    • Add chopped coriander leaves and 1 cup of breadcrumbs to the mixture. Mix well to form a dough-like consistency.
  2. Shape the Nuggets:
    • Take small portions of the veggie mixture and shape them into small nuggets or patties.
    • In a small bowl, mix all-purpose flour and cornflour with a little water to make a smooth, thick batter.
  3. Coat the Nuggets:
    • Dip each nugget into the batter, ensuring it’s coated evenly.
    • Roll the coated nuggets in breadcrumbs to cover them completely. This will give the nuggets a crispy texture when fried.
  4. Fry the Nuggets:
    • Heat oil in a deep frying pan over medium heat.
    • Fry the nuggets in batches until they are golden brown and crispy on all sides.
    • Remove the nuggets and place them on paper towels to drain excess oil.
  5. Serve:
    • Serve hot with ketchup, chutney, or your favorite dipping sauce.
