Chello Kebab Koobideh is a delicious dish perfect for celebrating Eid.
Preparation Of Chello Kebab Koobideh:
Ingredients:
- 500g ground beef or lamb
- 1 onion, grated
- 2 cloves of garlic, minced
- 1 teaspoon turmeric
- 1 teaspoon ground sumac (optional)
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons plain yogurt
- 2 tablespoons olive oil
- Skewers, soaked in water if wooden
- Cooked saffron rice, to serve
- Chopped fresh parsley or mint, for garnish
Instructions:
- In a large mixing bowl, combine the ground meat, grated onion, minced garlic, turmeric, sumac (if using), cumin, salt, black pepper, and yogurt. Mix well until all the ingredients are evenly incorporated.
- Preheat your grill or barbecue to medium-high heat.
- Divide the meat mixture into equal portions and shape them into elongated sausage-like shapes around the skewers. Press the meat mixture firmly onto the skewers to prevent them from falling apart during grilling.
- Brush the kebabs with olive oil to prevent sticking and promote browning.
- Place the kebabs on the preheated grill and cook for about 4-5 minutes on each side, or until they are cooked through and have nice grill marks.
- While grilling, occasionally brush the kebabs with the remaining olive oil to keep them moist.
- Once the kebabs are cooked, remove them from the grill and let them rest for a few minutes.
- Serve the Chello Kebab Koobideh hot with saffron rice and garnish with chopped fresh parsley or mint.
