Ingredients:
- 1 cup vermicelli (thin or roasted)
- 1 liter full-fat milk

- 1 tablespoon ghee (clarified butter)
- 1 teaspoon rose water
- 1/2 teaspoon cardamom powder

Preparation:
- Heat ghee in a deep pan or saucepan over medium heat. Once the ghee is hot, add the vermicelli and roast until it turns golden brown, stirring constantly to prevent burning. This step adds a nutty flavor to the kheer.
- In another large pot, bring the milk to a boil over medium heat. Once it boils, reduce the heat to low and let the milk simmer, stirring occasionally to prevent it from sticking to the bottom of the pot.
- Add the roasted vermicelli to the simmering milk and continue to cook, stirring occasionally, until the vermicelli becomes soft and the milk thickens to a creamy consistency. This may take about 15-20 minutes.
- Once the vermicelli is cooked and the kheer has thickened, add sugar, chopped nuts, cardamom powder, and saffron strands (if using). Stir well to combine and allow the sugar to dissolve completely.
- Cook the kheer for another 5-7 minutes, allowing the flavors to meld together. If the kheer becomes too thick, you can adjust the consistency by adding a little more milk.
- Turn off the heat and stir in the rose water, giving the kheer a fragrant floral aroma. Taste the kheer and adjust the sweetness according to your preference by adding more sugar if needed.
- Allow the Gulab Seviyan Kheer to cool slightly before serving. Garnish with rose petals and additional chopped nuts if desired.
