Ingredients

  • 1 cup large green olives (pitted, preferably stuffed with garlic, almonds, or cheese)
  • 1/2 cup all-purpose flour
  • 1 large egg (beaten)
  • 1 cup breadcrumbs (plain or seasoned)
  • 1/2 teaspoon smoked paprika (optional, for flavor)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Vegetable oil (for frying)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Prep the Olives
    • Drain the olives and pat them dry with a paper towel. This ensures the coating adheres properly.
  2. Set Up Breading Stations
    • Place the flour in a shallow dish.
    • Beat the egg in a separate dish.
    • Mix the breadcrumbs, smoked paprika, salt, and pepper in a third dish.
  3. Bread the Olives
    • Roll each olive in the flour, coating it lightly. Shake off excess.
    • Dip it into the beaten egg, ensuring it’s fully coated.
    • Roll it in the breadcrumb mixture, pressing gently so the crumbs stick.
  4. Fry the Olives
    • Heat about 1–2 inches of vegetable oil in a deep skillet or saucepan over medium heat until it reaches 350°F (175°C).
    • Fry the olives in small batches for about 2–3 minutes or until golden brown.
    • Remove with a slotted spoon and place on a plate lined with paper towels to drain.
  5. Serve
    • Garnish with fresh parsley if desired. Serve warm with a dipping sauce like aioli, marinara, or a yogurt-based dip.

Tips

  • For a healthier version, bake the olives in an oven at 400°F (200°C) for 12–15 minutes or until crispy, flipping halfway.
  • Try stuffed olives for added flavor—blue cheese or pimento-stuffed varieties work wonderfully.
