Instructions:

  1. Preparation: Grate the carrots and keep aside. Extract the juice from the oranges. Crush the cardamom pods and chop the nuts. Soak the saffron strands in a tablespoon of warm milk.

  2. Cooking Carrots: Heat a tablespoon of ghee or butter in a heavy-bottomed pan. Add the grated carrots and sauté for 4-5 minutes on medium heat until they become soft and the raw smell disappears.

  4. Combining Ingredients: Once the carrots are cooked, add the boiled milk to the pan with carrots. Mix well and let it simmer for another 10-15 minutes until the mixture thickens slightly.

  5. Sweetening: Add sugar according to your taste preferences and mix well. Let it cook for another 5 minutes until the sugar dissolves completely.

  6. Flavoring: Add the orange juice, crushed cardamom pods, chopped nuts, and raisins to the mixture. Stir well and let it simmer for a few more minutes.

  7. Finishing Touches: If using saffron, add the soaked saffron strands along with the milk. Mix well. Turn off the heat and let the kheer cool down to room temperature.
