Putharekulu is a traditional sweet from the Andhra Pradesh region in India. It is known for its delicate rice paper-like layers filled with sweet stuffing.
Here’s a simple recipe to make Putharekulu at home:
Ingredients:
- Rice flour – 1 cup
- Ghee (clarified butter) – 1/2 cup
- Powdered sugar – 1 cup (adjust to taste)
- Cardamom powder – 1/2 tsp
- Dry fruits (cashews, almonds, pistachios) – 2 tbsp (chopped)
- Water – as needed for batter
For the Rice Paper:
- Thin muslin cloth or non-stick paper
- Dosa tawa or a wide non-stick pan
Instructions:
Step 1: Prepare Rice Flour Batter
- Take 1 cup of rice flour in a bowl and slowly add water while stirring to make a thin, smooth batter. The consistency should be watery but lump-free.
- Let the batter sit for about 30 minutes.
Step 2: Prepare the Stuffing
- Mix powdered sugar with cardamom powder and set aside.
- Lightly roast the chopped dry fruits in a tablespoon of ghee and keep them aside.
Step 3: Make the Rice Paper
- Heat a wide non-stick tawa (or pan) on low heat.
- Dip a clean muslin cloth in water and squeeze out the excess water.
- Dip the cloth in the rice batter and lift it up gently to allow the excess batter to drip off.
- Quickly spread the cloth over the hot tawa, leaving a very thin layer of batter behind.
- Wait for a few seconds until the batter dries and forms a thin rice paper-like sheet. Gently peel off this sheet and set aside on a clean surface. Repeat to make more sheets.
Step 4: Assemble the Putharekulu
- Take one rice paper and place it on a flat surface.
- Brush the entire sheet with ghee.
- Sprinkle a generous amount of powdered sugar on top.
- Add a small amount of roasted dry fruits evenly across the sheet.
- Fold the rice paper into a rectangle or roll it up, enclosing the filling tightly.
Step 5: Serve
- Once all the Putharekulu are prepared, serve them fresh.
- You can store them in an airtight container for a few days if you want to enjoy them later.
