“Golconda Chicken” is a popular Indian dish known for its rich flavors and aromatic spices.
Preparation Of Golconda Chicken
Ingredients:
For marination:
- 500 grams of chicken, cut into pieces
- 1 tablespoon of ginger-garlic paste
- 1/2 cup of yogurt
- 1 teaspoon of red chili powder
- 1/2 teaspoon of turmeric powder
- Salt to taste
For gravy:
- 2 tablespoons of oil or ghee
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 1 tablespoon of ginger-garlic paste
- 1 teaspoon of cumin seeds
- 1 teaspoon of coriander powder
- 1/2 teaspoon of garam masala
- 1/2 teaspoon of red chili powder
- 1/4 teaspoon of turmeric powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Marinate the chicken: In a bowl, mix together the chicken pieces, ginger-garlic paste, yogurt, red chili powder, turmeric powder, and salt. Cover and let it marinate for at least 30 minutes in the refrigerator.
- Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until it turns golden brown.
- Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add the tomato puree and cook until the oil separates from the masala.
- Now, add coriander powder, garam masala, red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes.
- Add the marinated chicken along with the marinade to the pan. Mix everything well.
- Cover the pan and let the chicken cook on low to medium heat until it is tender and cooked through. Stir occasionally to prevent sticking.
- Once the chicken is cooked, check for seasoning and adjust if needed.
- Garnish with fresh coriander leaves.
- Serve hot with rice, naan, or roti.
