Preparation Of Golconda Chicken

Ingredients:

For marination:
  • 500 grams of chicken, cut into pieces
  • 1 tablespoon of ginger-garlic paste
  • 1/2 cup of yogurt
  • 1 teaspoon of red chili powder
  • 1/2 teaspoon of turmeric powder
  • Salt to taste
For gravy:
  • 2 tablespoons of oil or ghee
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 1 tablespoon of ginger-garlic paste
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of coriander powder
  • 1/2 teaspoon of garam masala
  • 1/2 teaspoon of red chili powder
  • 1/4 teaspoon of turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish
Instructions:
  1. Marinate the chicken: In a bowl, mix together the chicken pieces, ginger-garlic paste, yogurt, red chili powder, turmeric powder, and salt. Cover and let it marinate for at least 30 minutes in the refrigerator.
  2. Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add the finely chopped onion and sauté until it turns golden brown.
  4. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
  5. Add the tomato puree and cook until the oil separates from the masala.
  6. Now, add coriander powder, garam masala, red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes.
  7. Add the marinated chicken along with the marinade to the pan. Mix everything well.
  8. Cover the pan and let the chicken cook on low to medium heat until it is tender and cooked through. Stir occasionally to prevent sticking.
  9. Once the chicken is cooked, check for seasoning and adjust if needed.
  10. Garnish with fresh coriander leaves.
  11. Serve hot with rice, naan, or roti.
