Ghee Roast Chicken

Marinate a whole chicken in a mixture of ghee, yogurt, spices, and lemon juice, then roast until golden brown for a flavorful Ghee Roast Chicken.

Preparation of ghee roast chicken:

Ingredients:

  • 1 whole chicken, about 3-4 lbs, cleaned and skin-on
  • 4 tablespoons ghee (clarified butter)
  • 2 tablespoons yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon red chili powder (adjust to taste)
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • Fresh cilantro leaves for garnish
  • Lemon wedges for serving

Instructions:

  1. Make deep slits on the chicken pieces using a sharp knife. This helps the marinade penetrate deeper and flavors the chicken better.
  2. In a mixing bowl, combine ghee, yogurt, lemon juice, ginger-garlic paste, red chili powder, coriander powder, turmeric powder, cumin powder, garam masala powder, and salt. Mix well to form a smooth marinade.
  3. Rub the marinade all over the chicken, making sure to coat it evenly, including inside the slits. You can also marinate the chicken overnight in the refrigerator for richer flavors, but if you’re short on time, marinate for at least 30 minutes.
  4. Preheat your oven to 375°F (190°C). Place the marinated chicken in a baking dish or on a baking tray lined with aluminum foil for easy cleanup.
  5. Roast the chicken in the preheated oven for about 50-60 minutes, or until the chicken is cooked through and the skin is golden brown.
  6. You can baste the chicken with the leftover marinade halfway through cooking for extra flavor and moisture.
  7. Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. Garnish with fresh cilantro leaves and serve hot with lemon wedges on the side.
