Ingredients:

  • 4 eggs

  • 1/2 cup finely chopped cilantro (coriander leaves)
  • Salt to taste
  • 1/2 teaspoon red chili powder (optional)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala (optional)
  • Butter or ghee for toasting the bread
  • Oil for frying
  • Tomato ketchup or chutney (optional, for serving)
Instructions:
  1. Crack the eggs into a mixing bowl. Add chopped onions, green chilies, cilantro, salt, red chili powder, turmeric powder, and garam masala. Mix everything well to make the egg bhaji mixture.

  2. Heat oil in a frying pan over medium heat. Once the oil is hot, pour a ladleful of the egg mixture into the pan to make an omelette-like bhaji. Cook until the bottom is golden brown, then flip and cook the other side until cooked through. Repeat with the remaining egg mixture to make more bhajis.

  3. While the bhajis are cooking, toast the bread slices until they are lightly golden brown. You can use a toaster or a skillet with some butter or ghee for toasting.
