Low-Fat Poha Snack Recipe:

Ingredients:

  • 1 cup Poha (flattened rice)
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 small carrot, grated
  • 1/2 cup green peas (fresh or frozen)
  • 1 green chili, finely chopped (optional)
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1 tablespoon lemon juice
  • Fresh coriander leaves for garnish
  • 1 teaspoon oil

Instructions:

  1. Preparation: Rinse the Poha in a colander under running water for a few seconds. Drain and keep it aside for 10-15 minutes to soften. Be cautious not to soak it for too long as it may become mushy.
  2. Heat Oil: Heat oil in a non-stick pan or wok on medium heat.
  3. Tempering: Add mustard seeds and cumin seeds. Let them crackle. Then, add a pinch of asafoetida (hing).
  4. Saute Vegetables: Add chopped onions, green chili (if using), and sauté until onions become translucent.
  5. Add Veggies: Add chopped tomatoes, grated carrot, and green peas. Cook until the vegetables are tender yet slightly crunchy.
  6. Seasoning: Add turmeric powder and salt. Mix well.
  7. Add Poha: Add the soaked and softened Poha to the pan. Gently mix everything together until the Poha is well combined with the vegetables. Cook for another 2-3 minutes on low heat.
  8. Finish: Turn off the heat. Add lemon juice and mix well. Garnish with freshly chopped coriander leaves.
  9. Serve: Serve hot or at room temperature as a nutritious and low-fat snack option.

  • You can add other vegetables like bell peppers, green beans, or spinach for variation and extra nutrition.
  • Be mindful of the portion size to control calorie intake.
