Uggani Recipe (Borugula Upma)

Uggani (also called Borugula Upma) is a popular breakfast and snack in Andhra Pradesh, especially in Rayalaseema. It is made using puffed rice (borugulu/murmura) and is usually served with spicy mirchi bajji. It is light, flavorful, and very easy to prepare.


🥣 Ingredients

  • 4 cups puffed rice (borugulu / murmura)
  • 1 large onion (finely chopped)
  • 2 green chilies (slit)
  • 1 small tomato (optional, chopped)
  • 1 teaspoon ginger (finely chopped)
  • 2 tablespoons peanuts
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 sprig curry leaves
  • ¼ teaspoon turmeric powder
  • Salt (as needed)
  • 2 tablespoons oil
  • Fresh coriander leaves (for garnish)
  • Lemon juice (1–2 teaspoons)

👩‍🍳 Preparation Method

1. Prepare Puffed Rice

Take puffed rice in a large bowl and sprinkle a little water over it. Mix gently and keep it aside for 5 minutes. This makes it soft but not soggy.


2. Tempering

Heat oil in a pan. Add peanuts and fry until they turn golden and crunchy.

Add mustard seeds and let them splutter. Then add cumin seeds, curry leaves, green chilies, and chopped ginger. Sauté for a minute.


3. Cooking the Base

Add chopped onions and sauté until they become soft and slightly golden.

If using tomatoes, add them now and cook until they become soft.

Add turmeric powder and salt. Mix well.


4. Add Puffed Rice

Now add the softened puffed rice to the pan. Mix everything gently so that the spices coat evenly.

Cook on low flame for 2–3 minutes. Do not overcook.


5. Final Touch

Turn off the flame. Add lemon juice and mix well.

Garnish with fresh coriander leaves.
