Almond and Sesame Pinni is a nutritious, energy-packed sweet commonly made in winter. It combines almonds, sesame seeds, and whole wheat flour, making it rich in healthy fats, protein, and essential nutrients.
Here’s a step-by-step recipe:
Ingredients
(Makes 10-12 pieces)
- Almonds: 1 cup
- Sesame seeds (white): 1/2 cup
- Whole wheat flour: 1 cup
- Ghee (clarified butter): 3/4 cup
- Jaggery or powdered sugar: 3/4 cup (adjust to taste)
- Cardamom powder: 1 tsp
- Dry fruits (optional, like cashews, pistachios): 1/4 cup
- A pinch of nutmeg (optional)
Instructions
1. Preparation
- Dry roast almonds on low heat until fragrant. Let them cool, then grind into a coarse powder.
- Roast sesame seeds until they pop slightly, then cool and grind them coarsely.
2. Roasting Flour
- Heat 1/2 cup of ghee in a large pan.
- Add whole wheat flour and roast on low heat until golden brown and aromatic. Stir constantly to prevent burning.
3. Combining Ingredients
- Add the almond and sesame powders to the roasted flour. Mix well and roast for 2-3 minutes.
- Turn off the heat and let the mixture cool slightly.
4. Sweetening
- Add powdered jaggery or sugar to the warm mixture. Stir to combine thoroughly.
- Add the remaining 1/4 cup ghee, cardamom powder, and nutmeg (if using). Mix until the mixture binds together.
5. Shaping Pinnis
- Take a small portion of the mixture and press it into tight, round balls (laddu shape) or flatten into discs.
6. Cooling & Storage
- Allow the pinnis to cool completely. Store them in an airtight container. They keep well for 2-3 weeks at room temperature.
Tips
- Adjust sweetness as needed.
- For a crunchier texture, add chopped dry fruits.
- Use warm ghee for easy mixing and shaping.
