- 1 teaspoon cumin seeds
- Salt to taste
- Water for boiling

- 3 large onions (thinly sliced)
- 3 tablespoons ghee
- 2 tablespoons cooking oil
- A pinch of saffron soaked in warm milk (optional)
- Fried onions for garnish
- Mint and coriander leaves
- Cashews and raisins (optional)
Step 1: Marinate the Chicken
Wash the chicken thoroughly and drain all excess water. In a large mixing bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric, coriander powder, cumin powder, garam masala, lemon juice, salt, oil, chopped mint, and coriander leaves. Add the chicken pieces and coat them evenly with the marinade.
Cover the bowl and refrigerate the chicken for at least one hour. For the best flavor, marinate it overnight. This allows the spices to penetrate the chicken, making it juicy, tender, and full of flavor.
Step 2: Prepare the Basmati Rice
Wash the basmati rice three to four times until the water becomes clear. Soak the rice for about 30 minutes.
In a large pot, bring plenty of water to a boil. Add bay leaves, cinnamon, cloves, cardamoms, cumin seeds, and salt. Add the soaked rice and cook until it is approximately 70% done. The rice should still be slightly firm because it will continue cooking later.
Drain the rice immediately and spread it on a tray to prevent overcooking.
Step 3: Fry the Onions
Heat oil and ghee in a heavy-bottomed pan. Add the thinly sliced onions and fry them over medium heat until they turn golden brown and crispy.
Remove the onions and place them on paper towels to absorb excess oil. Fried onions add sweetness, aroma, and a beautiful color to the biryani.
Step 4: Cook the Chicken
In the same pan, add the marinated chicken along with all the marinade. Cook over medium heat for about 20–25 minutes, stirring occasionally.
The chicken should become tender while the gravy thickens. Avoid drying the gravy completely because some moisture is needed to steam the rice later.
Taste and adjust the seasoning if necessary.
Step 5: Layer the Biryani
Now it’s time to assemble the biryani.
Place half of the cooked rice over the cooked chicken.
Sprinkle fried onions, chopped mint leaves, coriander leaves, and a little saffron milk over the rice.
Add the remaining rice on top and repeat the garnish with more fried onions, herbs, saffron milk, and a spoonful of ghee.
This layering process helps distribute flavors evenly throughout the dish.
Step 6: Dum Cooking (Steam Cooking)
Cover the pot tightly with a lid. If needed, seal the edges using wheat dough or aluminum foil to prevent steam from escaping.
Cook on very low heat for 20–25 minutes.
This traditional “Dum” cooking method allows the rice to absorb the rich chicken flavors while preserving the aroma of the spices.
After cooking, switch off the heat and let the biryani rest for another 10 minutes before opening the lid.
Step 7: Serve the Biryani
Gently fluff the rice using a large spoon without breaking the grains.
