Fry Piece Biryani is a flavorful and spicy chicken biryani made with crispy, marinated chicken pieces that are fried until golden and then layered with fragrant basmati rice. Unlike traditional biryani, where chicken is cooked directly with the rice, fry piece biryani gets its special taste from the separately fried chicken. The combination of crispy chicken, aromatic rice, caramelized onions, fresh herbs, and spicy masala makes this dish perfect for lunch, dinner, family gatherings, and special occasions.
Ingredients
For the Chicken Fry
- 500 grams chicken, preferably boneless or small bone-in pieces
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- ½ teaspoon turmeric powder
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- 1 tablespoon lemon juice
- 2 tablespoons curd
- 2 tablespoons corn flour
- 1 tablespoon rice flour
- Salt as needed
- 1 teaspoon biryani masala
- Oil for frying
- A few curry leaves
For the Biryani Rice
- 2 cups basmati rice
- 4 cups water
- 1 bay leaf
- 3 cardamom pods
- 4 cloves
- 1 small cinnamon stick
- 1 star anise
- 1 teaspoon cumin seeds
- Salt as needed
- 1 tablespoon oil
- 1 tablespoon lemon juice
For the Biryani Masala
- 2 large onions, thinly sliced
- 2 tomatoes, chopped
- 2 green chilies, slit
- 1 tablespoon ginger-garlic paste
- ½ cup curd
- ½ teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- 1 teaspoon biryani masala
- ½ cup mint leaves
- ½ cup coriander leaves
- 2 tablespoons cooking oil
- 1 tablespoon ghee
- Salt to taste
Step 1: Marinate the Chicken
Wash the chicken pieces thoroughly and drain all the excess water. Place the chicken in a large mixing bowl. Add ginger-garlic paste, red chili powder, turmeric powder, coriander powder, garam masala, biryani masala, salt, lemon juice, and curd.
Mix everything well so the masala coats every chicken piece evenly. Add corn flour and rice flour and mix again. The flour helps create a slightly crispy coating when the chicken is fried.
Cover the bowl and allow the chicken to marinate for at least 30 minutes. For better flavor, you can refrigerate it for 2–3 hours. Longer marination allows the spices to penetrate the chicken and makes the final fry pieces more flavorful.
Step 2: Fry the Chicken
Heat sufficient oil in a deep frying pan over medium heat. Once the oil is hot, carefully add the marinated chicken pieces one by one. Do not overcrowd the pan because overcrowding can reduce the temperature of the oil and make the chicken less crispy.
Fry the chicken on medium heat until the pieces become golden brown and fully cooked. Turn them occasionally so they cook evenly on all sides.
Add a few curry leaves toward the end of frying for an extra South Indian aroma. Once the chicken is cooked and crisp on the outside, remove it from the oil and place it on a kitchen towel to absorb excess oil.
Keep the fried chicken pieces aside.
Step 3: Prepare the Biryani Rice
Wash the basmati rice several times until the water becomes relatively clear. Soak the rice in water for about 20–30 minutes. Soaking helps the grains cook evenly and remain long and fluffy.
In a large pot, bring 4 cups of water to a boil. Add bay leaf, cardamom, cloves, cinnamon, star anise, cumin seeds, salt, oil, and lemon juice.
Drain the soaked rice and add it to the boiling water. Cook until the rice is approximately 70–80% done. The rice should still have a slight bite because it will finish cooking during the final layering process.
Drain the rice immediately and keep it aside.
Step 4: Prepare the Biryani Masala
Heat oil and ghee in a heavy-bottomed pan. Add the sliced onions and fry them until they become golden brown. Remove a small portion of the fried onions and keep them aside for garnishing.
Add green chilies and ginger-garlic paste to the remaining onions. Sauté until the raw smell disappears.
Add chopped tomatoes and cook until they become soft and the oil begins to separate. Add turmeric powder, red chili powder, coriander powder, garam masala, biryani masala, and salt.
Mix everything well and cook for a few minutes.
Lower the flame and add the curd gradually while stirring continuously. Cook until the masala becomes thick and creamy. Add chopped mint and coriander leaves and mix well.
Step 5: Layer the Biryani
Now reduce the flame to low. Spread half of the prepared biryani rice over the masala. Place some fried chicken pieces over the rice.
Add another layer of the remaining rice and place the rest of the fried chicken pieces on top. Sprinkle the reserved fried onions, chopped coriander, mint leaves, and a little ghee over the top.
For additional aroma, you can sprinkle a few drops of saffron milk over the rice, although this is optional.
Step 6: Dum Cooking
Cover the pan tightly with a lid. If the lid does not seal properly, you can place aluminum foil underneath the lid to trap the steam.
Cook the biryani on very low heat for about 15–20 minutes. The steam will finish cooking the rice and allow the chicken and masala flavors to blend beautifully.
Once done, switch off the flame and allow the biryani to rest for another 10 minutes before opening the lid.
Open the lid gently and fluff the rice from the sides using a fork or flat spoon. Avoid mixing too aggressively because the long basmati grains can break.
Serving Suggestions
Serve hot Fry Piece Biryani with onion raita, cucumber raita, mirchi ka salan, or a simple vegetable salad. You can also serve it with boiled eggs and lemon wedges for a complete biryani meal.

Fry the chicken over medium heat rather than extremely high heat, which can brown the outside while leaving the inside undercooked.
Fresh mint, coriander, fried onions, and ghee are important for achieving the classic biryani aroma. Finally, always give the biryani a few minutes of resting time after dum cooking.
